CHICKEN IN TOMATO SAUCE
Kyckling i tomatsås

The chicken pieces are fried in the oven, in a tomato sauce with a hearty taste of wine, bouillon and spices. You can make this in advance and then heat it up again before serving.

4 servings

1 chicken, approx 2 lbs
½ teaspoon salt
¼ teaspoon white pepper
¼ cup + 2 tablespoons flour
4 tablespoons oil
1 chopped onion
2 crushed garlic cloves
1/3 cup white wine
1/3 cup chicken bouillon
1 can crushed tomatoes, 14 oz
1 teaspoon dried basil
½ teaspoon dried thyme


Heat the oven to 390F.

Cut the chicken in pieces, flavour them with salt and pepper and turn them in scant ¼ cup flour. Heat up 2 tablespoons of the oil in a saucepan, brown the chicken on all sides and transfer them to an oven-proof dish. Heat up remaining oil in the pan or in a saucepan and sizzle garlic and onion for a few minutes. Stir in 2 tablespoons flour and dilute with wine and bouillon (the wine can be substituted with chicken bouillon as well).

Let the sauce boil on medium heat until it thickens. Add tomatoes, basil and thyme. Flavour to taste with salt and pepper if necessary. Pour the sauce over the chicken and cover with aluminum foil. Fry in the middle of the oven for 40 to 45 minutes or until the chicken is done. Baste with the sauce a couple of times.

Serve the chicken straight from the pan.
