CHILI-FLAVOURED PORK CHOPS

Let the pork chops simmer in the sauce for a long time, and they will get really tender. Rice and shredded iceberg lettuce is one suggestion for serving.

4 boneless pork chops
1 to 2 tablespoons oil
1 onion
1 tablespoon white wine vinegar
1 cup chili sauce
powdered chili
2 tablespoons brown sugar
1 red bell pepper, cut in rings
salt, pepper
Heat the oil in a frying pot. Brown the pork chops on rather high heat until coloured on both sides, approx 5 minutes. Transfer to a plate. Cut the onion in rings and brown them in the pot for 3 to 5 minutes. Transfer them to the plate.
Lower the heat and whisk out the pot with the vinegar. Add chili sauce, powdered chili and brown sugar. Put the pork chops and onion rings back in the pot and stir. Top with bell pepper in rings. Put a lid on and let it all simmer for about 45 minutes or until the meat is really tender. Flavour to taste with salt and pepper.
Serve with boiled rice flavoured with paprika, chili pepper and maybe some ground cinnamon.
