Citrus garlic shrimp - Citrusräkor med vitlök

CITRUS GARLIC SHRIMP
Citrusräkor med vitlök

These juicy shrimps are fried in a butter flavoured with garlic and lemon and is served with fresh herbs and pasta.

4 servings

12 oz pasta of your choice, e.g. farfalle
1 ¾ oz butter or margarine
2 garlic cloves
juice and finely grated zest from 1 lime
¼ cup chopped leafy parsley
15 oz peeled shrimp
black pepper
salt

Bring water to a boil in a large saucepan and boil the pasta for 8 minutes or according to package instructions, until the pasta is tender but still is al dente.

Meanwhile, melt the fat in a large saucepan on low heat. Crush the garlic and let it get tender in the fat, without taking colour, approx 2 minutes. Add lemon juice and zest and let fry for about 30 seconds until the liquid has been reduced with half the amount.

Heat up the shrimp while stirring for about 1 minute until heated through. Flavour to taste with black pepper and salt. Drain the pasta and turn it into the pan. Blend until the pasta is coated by citrus butter. Serve immediately on warm plates.
