DANISH BERRY COMPOTE
Dansk bärkompott
10 oz cherries
2/3 cup sugar
½ cup red wine
½ cup un-concentrated cherry drink
2 to 3 tablespoons potato starch
Rinse and gently trim the berries. Rinse and pit the
cherries. Mix all berries with sugar and leave to draw for 15 minutes to get
the juice out. Drain them and reserve the juice. (I’m finding that I’m having
problems with “drain” and “strain” … must be the age. But I hope you understand
what I mean anyway.)
Dansk bärkompott
This famous, almost national Danish dessert has
become popular here in Sweden as well. Lots of fibres and vitamins gathered in
a dessert with the taste of summer.

10 oz mixed berries, e.g. raspberries,
strawberries and blackberries10 oz cherries
2/3 cup sugar
½ cup red wine
½ cup un-concentrated cherry drink
2 to 3 tablespoons potato starch
Mix red wine, cherry drink and juice from the
berries in a saucepan. Reserve a few tablespoonfuls of the mixture, then bring
the remaining to a boil. Blend the potato starch with the reserved liquid, pour
it in the boiling liquid in the saucepan while stirring and bring to a boil.
Add the berries to the liquid and bring to a boil again, then remove from heat
immediately.
Pour the compote in a serving bowl or smaller bowls.
Chill it for 1 to 2 hours, then serve with some milk or cream.
You can, of course, substitute the fruits and
berries after season and also your liking! Try rhubarbs and strawberries or
cherries and blackcurrants. If you use sharp fruits like rhubarbs, add some
more sugar.
