Emma squares - Emmarutor

EMMA SQUARES
Emmarutor

8 to 12 squares

1/3 cup brown sugar
1 cup flour
1/3 cup chopped walnuts
4 tablespoons melted butter or margarine

Filling:
7 oz cream cheese
4 tablespoons sugar
grated zest from 1 lemon
1 tablespoon fresh lemon juice
2 tablespoon soured cream
1 teaspoon vanilla sugar
1 egg


Mix brown sugar, flour and nuts in a bowl. Stir in the melted fat and blend it all together to a crumbly dough. Reserve approx 1/3 cup of the crumbles and flatten the remainders out in a greased, oven-proof dish, approx 8 x 8 inches. Bake in the middle of the oven at 350F for about 10 minutes.

Beat cream cheese, sugar, lemon zest, lemon juice, soured cream, vanilla sugar and egg together. Pour the filling in the pan and sprinkle with remaining crumble dough. Bake for another 30 minutes or so, allow to cool slightly and then cut in squares. Let cool completely and serve. You can very well decorate with some fresh berries or pieces of fruit that you like.
