FARMER’S SOUP
Farmarsoppa
1 carrot
3½ to 5 oz smoked ham
1 celery stem
2/3 cup water
3 tablespoons butter or margarine
3 tablespoons flour
3½ cups milk
1 vegetable bouillon cube
1 tablespoon French mustard
white pepper
1½ cups grated cheese
some salt if needed
Peel potatoes, onion and carrot. Dice potatoes and
ham. Chop onion and celery and coarsely grate the carrot. Boil the diced
potatoes in the water for about 10 minutes and save the water. Melt the fat in
a saucepan and sizzle onion, carrot and celery until all is tender. Sprinkle
with flour.

Soups are comfortable and good for you. This one with
potatoes, veggies, cheese and ham is a great main course.

2 potatoes
1 onion1 carrot
3½ to 5 oz smoked ham
1 celery stem
2/3 cup water
3 tablespoons butter or margarine
3 tablespoons flour
3½ cups milk
1 vegetable bouillon cube
1 tablespoon French mustard
white pepper
1½ cups grated cheese
some salt if needed
Decoration:
chopped parsley
Beat in milk and potato water, add bouillon cube,
mustard and pepper and let it all boil for about 5 minutes. Add ham, cheese and
potatoes and boil for another 5 minutes. Flavour to taste, sprinkle with
parsley and serve the soup.
