CHICKEN IN THE OVEN

Sauce:
3 tablespoons chopped onion
2 tablespoons water
3 tablespoons brown sugar
1 tablespoon Maizena
1 tablespoon orange juice
1 tablespoon red wine vinegar
1 can crushed tomatoes, 14 oz
a few drops tabasco
1 tablespoon powdered mustard, like Coleman’s,
or 3 tablespoons mustard
1 to 1½ teaspoons dried sage
Wipe off the chicken and put the parts/pieces in an oven-proof dish. Heat the oven to 350F.

tasty, easy-to-make chicken dish that smells great from tomatoes, onions and
spices.

1 chicken
in pieces, approx 2 lbs,
or same
amount of chicken partsSauce:

2 tablespoons water
3 tablespoons brown sugar
1 tablespoon Maizena
1 tablespoon orange juice
1 tablespoon red wine vinegar
1 can crushed tomatoes, 14 oz

Wipe off the chicken and put the parts/pieces in an oven-proof dish. Heat the oven to 350F.
Sauce:
Mix all
ingredients together for the sauce, except for the sage, in a bowl. Bring to a
boil while stirring, then simmer slowly for 10 minutes or so. Stir
occasionally. Add sage and pour the sauce over the chicken in the dish.
Fry the
chicken in the oven for 35 to 45 minutes or until done. Serve with sliced
pineapple, a green salad and rice, maybe some warm bread as well.
