LIME PIE EXTRAORDINAIRE
Sagolik limepaj

Enjoy this refreshing pie after a nice dinner. The contrast between the sharp lime and the crunchy, caramelly pie shell is outstanding.

8 pieces

7 oz cream cheese
7 oz yogurt, preferably Greek or Russian
2 eggs
2 egg whites
2 to 3 tablespoons sugar
1 teaspoon vanilla sugar
juice from 1 to 2 lime fruits, approx 1/3 cup
1 teaspoon grated lime zest

Pie shell:
15 digestive biscuits, e.g. McVities
1 oz butter or margarine
2½ oz plain yogurt

Decoration:
1 cup crème fraîche or soured cream
1 teaspoon vanilla sugar


Heat the oven to 390F. Crush the biscuits and mix with melted fat and yogurt to a crumbly dough. Press it out in a pie pan, diameter 24 cm/good 9 inches, and put in a cool place for about 10 minutes. Bake in the oven for about 10 minutes.

Lower the heat to 350F. Stir cheese and yogurt with eggs and egg whites. Add sugar and vanilla sugar and beat in lime juice and zest. Blend well. Pour the filling in the pre-baked pie shell and bake until the filling has set, 30 to 45 minutes.

Allow the pie to cool on a rack and then put it in the fridge until completely cold, at least 2 hours or overnight.

Flavour crème fraîche with vanilla sugar and pipe or spoon it out alongside the edges of the pie, or spread out a thin layer of flavoured soured cream on top and decorate with finely shredded lime.
