MEATBALLS IN TOMATO AND BELL PEPPER SAUCE
Köttbullar i tomat- och paprikasås
2 green bell peppers
1 small zucchini/squash
2 cans whole tomatoes, each 14 oz
2 tablespoons oil
white pepper
½ teaspoon dried oregano
10 oz ground meat, 50/50
1 tablespoon mustard
½ teaspoon chili flakes or paprika
2 tablespoons dried breadcrumbs
salt
1 bunch coarsely chopped parsley
Slice the onion and chop the garlic. Trim and shred
the bell peppers. Peel the squash and split it lengthwise. Trim it carefully
and cut in thin slices. Coarsely cut the tomatoes in the cans. Heat up 1
tablespoon oil in a saucepan, put in onion and garlic and sizzle until the
onion starts to soften. Add bell peppers and squash and quickly sizzle while stirring,
then add tomatoes with their juice and flavour to taste with pepper and
oregano. Put a lid on and simmer on low heat for 20 to 25 minutes.

Small, spicy meatballs in a hearty tomato sauce –
delicious and nutritious.

1 onion
2 garlic cloves2 green bell peppers

1 tablespoon mustard
½ teaspoon chili flakes or paprika
2 tablespoons dried breadcrumbs
salt
1 bunch coarsely chopped parsley
Mix the ground meat with mustard, chili flakes or
paprika and dried breadcrumbs. Flavour with salt and pepper and stir until
smooth. Moisten your hands with cold water and shape the batter into
walnut-sized meatballs. Heat up remaining oil in a frying pan and brown the
meatballs all around. Put them in the tomato sauce, put the lid back on and
simmer for another 5 minutes until the meatballs are done. Sprinkle with
parsley and serve with rice or potatoes.
You can also serve this tomato sweet pepper sauce
with fried or barbecued pork chops or grilled fish. If you have a nice bread at
hand, add that when serving!
