ORANGE RAISIN
CAKE
Apelsin- och russinkaka
3 eggs
/3 cup walnuts or hazelnuts
½ orange
2 cups flour
1 teaspoon baking powder
1 teaspoon vanilla sugar
1/3 cup raisins
¼ cup candied orange peel
¾ cup milk
Stir fat and sugar until fluffy and add the eggs, one by one. Chop the nuts and squeeze the orange half. Mix flour, baking powder and vanilla sugar. Add nuts, orange juice, raisins, orange peel and milk to the cake batter and then turn in the flour mixture.

You find lots of good stuff in this cake, good to
serve with a cup of coffee or tea.
1 cake, approx 18 slices
5 oz butter or margarine
1½ cups sugar3 eggs

Stir fat and sugar until fluffy and add the eggs, one by one. Chop the nuts and squeeze the orange half. Mix flour, baking powder and vanilla sugar. Add nuts, orange juice, raisins, orange peel and milk to the cake batter and then turn in the flour mixture.
Pour in a greased, floured cake ring (Bundt pan), holding 6
cups. Bake in the lower part of the oven at 350F for about 50 minutes or
until done. Unmould and cool on a rack.
If you wish, you can stir some fresh orange juice
with powdered sugar and drizzle that over the cake, or sprinkle some chopped
nuts mixed with sugar and cinnamon on top.
