OVEN-BAKED STRAWBERRIES

1 vanilla pod
¾ cup heavy cream
3 egg yolks
4 tablespoons powdered sugar
3 tablespoons almond liqueur, Amaretto
2 egg yolks
1 tablespoon powdered sugar
1/3 cup Marsala wine
Start with the sauce. Grate the almond paste and stir the liqueur into it until the mixture is smooth. Beat egg yolks and powdered sugar until fluffy and airy. Put the bowl in a waterbath and heat while stirring until the sauce has thickened. Then you add the liqueur-almond paste mix and the Marsala wine.

to make this is in June (at least here in Sweden!), when the strawberries are
at their best and sweetest.

1 lb 8 oz strawberries
2 egg whitessalt
1 vanilla pod

3½ oz almond paste3 tablespoons almond liqueur, Amaretto

1 tablespoon powdered sugar
1/3 cup Marsala wine

Heat the oven to 480F. Wash and trim the
strawberries, wipe them off and put them in 4 oven-proof dishes. Beat egg
whites and salt until stiff. Warm the vanilla pod in water, scrape out the
seeds and mix them with cream. Beat the cream. Beat the egg yolks with powdered
sugar.
Put the cream on the strawberries, then the egg
white foam and the egg yolk batter. Bake in the middle of the oven for about 5
minutes and serve immediately together with the sauce.
