YOGURT CHOCOLATE CAKE
Yoghurtkaka med choklad

A luxurious cake with chopped white chocolate. The yogurt makes it moist and juicy – a delicacy to enjoy with a cup of coffee.

1 cake = approx 20 slices

3½ oz butter or margarine
1½ cups sugar
2 eggs
1 cup plain yogurt
2 cups flour
2 teaspoons vanilla sugar
2 teaspoons baking powder
2½ oz chopped white chocolate


Melt the fat in a saucepan and blend in the sugar. Beat in eggs and yogurt. Mix flour, vanilla sugar and baking powder in a bowl and gently turn it into the batter. Pour half of it in a greased, floured cake ring (Bundt pan), holding 6 cups. Sprinkle with the chopped chocolate and pour on remaining batter. Bake in the lower part of the oven at 350F for about 1 hour.

Leave to cool in the pan and then unmould onto a rack to cool completely.

The white chocolate can be substituted with chopped nuts.

If you want to, you can drizzle a glaze made of powdered sugar and fresh lemon juice, like in the picture, and decorate with sliced strawberries and kiwi.
