Breakfast bread - Frukostbulle (retro)

BREAKFAST BREAD
Frukostbulle

1/2 oz fresh yeast
1 ¼ cups water
1/2 oz butter or margarine
1 teaspoon salt
1 teaspoon sugar
3 ¾ cups flour


Stir the yeast with some lukewarm water. Pour half of the flour in the mixing bowl. Add water, warmed to 37°C/body heat, melted fat, salt, sugar and yeast and work to a loose dough. Gradually work in more flour until the dough is smooth and glossy and no longer sticking to the sides. Leave to prove until double in size.

Roll out to one larger and one smaller bun. Put the large bun on a greased baking plate (or use baking paper) and place the small bun on top. Press lightly and make a few cuts at the top with a sharp knife. Let rise and bake in the middle of the oven at 390 to 440F for 20 to 25 minutes.

Brush with hot water immediately after baking.
