GRILLED SAUSAGES WITH SAUERKRAUT
Grillad korv med surkål
2 to 3 tablespoons butter or margarine
salt, white pepper
1 can sauerkraut, approx 14 oz
some caraway
1 tablespoon butter or margarine
3 tablespoons tomato paste
1 tablespoon flour
¾ to 1 ¼ cups bouillon or water
salt, white pepper
a few drops Chinese soy sauce

Core the apples and cut them in thick slices. Split
the slices and sautée them in the fat until tender. Flavour gently with salt
and pepper. Heat the sauerkraut with some cumin and other spices to taste. Make
some cuts in the sausages and put them under the oven grill until nicely
browned.

Tomato sauce:
1 small, finely chopped onion1 tablespoon butter or margarine
3 tablespoons tomato paste
1 tablespoon flour
¾ to 1 ¼ cups bouillon or water
salt, white pepper
a few drops Chinese soy sauce
Decoration:
lemonparsley
Sautée the onion in the fat and add tomato purée,
flour and bouillon. Boil for a couple of minutes. Flavour with salt, white
pepper and some soy sauce.
Put the sauerkraut on a serving plate, place the
sausages on top and then the tomato sauce. Decorate with apples, lemon slices
and chopped parsley.
