Home-made fish patties - Hemlagade fiskbullar (retro)

HOME-MADE FISH PATTIES
Hemlagade fiskbullar

4 servings

6 potatoes
water, salt
2 tablespoons butter or margarine
2 tablespoons flour
2 eggs
1 bunch parsley
1 lb boiled, boneless, cold fillet of fish
2 chopped anchovy fillets
1/3 cup finely chopped leek
1 diced onion
oil for frying
lemon and melted butter for serving

Peel and boil the potatoes in lightly salted water. Steam them off and mash them. Add fat, flour and beaten egg to the mash and then parsley, fish in small pieces and anchovies. Lightly sautée the onion in some fat and stir it into the batter. Shape to patties with floured hands and fry them nicely brown in hot oil (or other fat).

Serve the fish patties with melted butter and lemon wedges. A tomato salad is good too. :-D (It’s always good!)

If you have some leftover mashed potatoes, the cooking time will of course be shorter. You can also make the batter the day before and fry the patties shortly before serving.
