Caribbean fillet of pork - Fläskfilé från Karibien

CARIBBEAN FILLET OF PORK
Fläskfilé från Karibien

Take your tastebuds on a trip to the eternal Caribbean sunshine with the help of this spicy fillet of pork.

4 servings

1 fillet of pork, approx 1 lb
1 to 2 onions
1 tablespoon oil
2 tablespoons medium strong curry
1 ¼ cups chicken bouillon
1 ¾ cups coconut milk
½ teaspoon salt
½ teaspoon black pepper
1 ¾ cups long-grained rice
2 msk chopped chives

Peel and chop the onions. Heat up the oil in a frying pan and sautée onions and curry for about 5 minutes, until the onion is tender. Cut the meat in 1 cm thick slices and fry them in the pan until done, about 10 minutes. Take up the meat and set aside. Add bouillon, coconut milk, salt and pepper to the onions in the pan and bring to a boil. Lower the heat and simmer the sauce until it thickens, approx 20 minutes. Put the meat back in the pan about 5 minutes before serving.

Meanwhile, boil the rice according to the package, but do not add any salt. Put the rice on a serving plate and meat and sauce on top. Sprinkle with chopped chives and serve immediately.
