FISH AU GRATIN WITH PARMESAN CHEESE
Fiskgratäng med parmesanost

A light meal which is also easy to make. You can serve it to guests as well as to your family – but shouldn’t you be able to do that with almost any food? :-D

4 servings

1 1/3 lbs fish fillets of cod or haddock
fresh juice from ½ lemon
1 teaspoon salt
white pepper
1 onion
1 bunch dill
2 tablespoons butter or margarine
¾ cup cream, 15% fat
4 tablespoons unsweetened dried breadcrumbs
3 tablespoons grated Parmesan cheese
some butter or margarine for the dish


Gently rinse the fish in cold water, wipe it off and put them next to each other in a dish. Drizzle with lemon juice, flavour with salt and pepper on both sides, cover and store cold.

Peel and finely chop the onion. Rinse and shake off the dill and pinch off the “leaves” (what on earth are they called?). Finely chop them. Heat up 1 tablespoon of the fat and sautée the onion until tender and glossy on low heat. Pour on the cream and let simmer to a creamy sauce.

Heat the oven to 390F. Mix dried breadcrumbs and Parmesan cheese in a small bowl. Grease a gratin dish with some fat. Flavour the sauce with salt, pepper and lemon juice and stir in the dill. Put the fish fillets next to each other in the greased gratin dish and pour the sauce over it all. Sprinkle with the bread-cheese mixture in an even layer on top and add remaining fat in dabs. Bake the fish in the oven for about 20 minutes.

Mashed potatoes or rice and a salad with cucumber and a yogurt sauce is lovely with this.
