CARINA’S APPLE CAKE
Carinas äppelkaka
2 tablespoons vanilla sugar
1 ¾ cups flour
1 teaspoon baking powder
1 egg
3 tablespoons cream, 15% fat
grated zest from 1 lemon
2 apples
1/3 cup sugar
¾ cup wholemeal flour
½ teaspoon ground cinnamon
2½ oz butter or margarine
2 teaspoons fresh lemon juice
Heat the oven to 350F. Grease a springform pan, diameter approx 9 inches.

This apple cake is made in a different way, namely
from juicy applesauce. The cake is fantastic and very easy to bake.
1 cake = 10 pieces
1 ¾ oz soft butter or margarine
1/3 cup brown sugar2 tablespoons vanilla sugar
1 ¾ cups flour
1 teaspoon baking powder
1 egg
3 tablespoons cream, 15% fat
grated zest from 1 lemon
Filling:
2/3 cup applesauce2 apples
1/3 cup sugar
¾ cup wholemeal flour
½ teaspoon ground cinnamon
2½ oz butter or margarine
2 teaspoons fresh lemon juice
Heat the oven to 350F. Grease a springform pan, diameter approx 9 inches.
Mix fat, brown sugar, vanilla sugar, flour, baking
powder, egg, cream and lemon zest. Blend well. Pour the batter in the baking
pan and smoothen the surface out with the back of a wet spoon. Spread the
applesauce on top of the cake batter. Core and slice the apples and put them on
top of the applesauce.
Blend sugar, wholemeal flour and cinnamon well. Add
the fat and pinch the crumble dough together so that the fat goes well into the flour. Add lemon juice and
sprinkle the crumble on top of the sliced apples. Bake in the oven for about 35
minutes until the cake is golden.
Serve hot or cold with some vanilla ice cream or
vanilla sauce.
