CHOCOLATE PEANUT COOKIES

1 egg
1 teaspoon grated lemon zest
1 ¼ cups flour
some baking powder
3½ oz milk chocolate or dark chocolate
3½ oz toasted peanuts
Heat the oven to 390F.

These crunchy cookies contain both chocolate and
peanuts and is loved by everyone, including me.
Approx 30 cookies
3½ oz butter or margarine
2/3 cup cane sugar1 egg
1 teaspoon grated lemon zest
1 ¼ cups flour
some baking powder
3½ oz milk chocolate or dark chocolate
3½ oz toasted peanuts
Heat the oven to 390F.
Stir soft fat and sugar in a bowl until fluffy. Add
egg and lemon zest. Sift the flour and baking powder into the batter and blend
well until you have a firm dough. Coarsely chop the chocolate and peanuts and
work them into the dough.
Grease a baking plate (or use baking paper). Use two
tablespoons for dropping out the dough in suitable pieces onto the plate. Make
sure you have 3 – 4 cm between each. Bake in the oven for 12 minutes until the
cookies are crunchy. Allow to cool on a rack and then keep them in an air-tight
jar.
You can also make raisin cookies with this recipe.
Substitute the chopped chocolate with raisins and then follow the recipe.
