LEMON-FLAVOURED NEW POTATOES
Citronkryddad färskpotatis
¼ cup finely chopped chives
grated zest and juice from 1 lemon
1 teaspoon apple cider vinegar
1 teaspoon Dijon mustard
1 garlic clove
¼ cup mint leaves
salt
black pepper
Rinse the potatoes and put it in a saucepan with
water. Cover and bring to a boil on medium heat, then lower the heat and boil
the potatoes until tender, 10 to 15 minutes.

Use your own home-grown potatoes or
buy small new potatoes in the store. They’ll be irresistible with this
flavourful dressing.

1 lb small, even-sized new potatoes
8 spring onions or shallots¼ cup finely chopped chives
Dressing:
4 teaspoons olive oilgrated zest and juice from 1 lemon
1 teaspoon apple cider vinegar
1 teaspoon Dijon mustard
1 garlic clove
¼ cup mint leaves
salt
black pepper
Dressing:
Pour oil, lemon zest and juice, vinegar, mustard,
crushed garlic, chopped mint leaves, salt and pepper in a glass jar with a
plastic lid. Screw it on well and shake the can so that the dressing blends
well. Store in the fridge until serving.
Strain the potatoes and steam it in the pot until
dry. Cut large potatoes in pieces. Rinse, trim and cut the spring onions or
shallots in diagonal slices. Mix that and the chopped chives with the warm
potatoes. Pour on the dressing and blend with wooden spoons until the potatoes
are moist from the dressing, then serve immediately.
