CHEDDAR BREAD
Cheddarbröd
3 tablespoons oil
1½ teaspoons sugar
1 teaspoon salt
3 eggs
1 cup grated Cheddar cheese
approx 4 cups flour
Crumble the yeast in a bowl. Heat milk and oil to 37°C/body heat. Dissolve the yeast in some of the milk. Add remaining milk, sugar, salt, eggs and cheese. Blend in the flour, little by little, and work the dough until smooth and pliable. Cover and leave to prove for about 1 hour.

Why not bake a really good, juicy cheese bread? I
choose Cheddar, one of my absolute favourites, but you can very well use some
other strong, ripe cheese with lots of flavour (well, that goes automatically,
doesn’t it?).
1 bread, approx 15 pieces
1 oz fresh yeast
1 cup milk3 tablespoons oil

1 teaspoon salt

1 cup grated Cheddar cheese
approx 4 cups flour

Crumble the yeast in a bowl. Heat milk and oil to 37°C/body heat. Dissolve the yeast in some of the milk. Add remaining milk, sugar, salt, eggs and cheese. Blend in the flour, little by little, and work the dough until smooth and pliable. Cover and leave to prove for about 1 hour.
Turn out the dough onto a floured work surface and
knead again until smooth. Shape to a round cake and put it in a greased, round
baking pan, diameter 10 to 12 inches. Cover and let rise for about 30 minutes.
Brush with beaten egg and bake in the lower part of the oven at 350F for
30 to 35 minutes or until the bread is done.
Unmould onto a rack and let cool under a cloth.
