CHICKEN IN CHEESE SAUCE
Kyckling i ostsås

The chicken is double coated, then oven-fried until crisp. You make a cheese sauce to go with the chicken – and voilà, you have a great festive dish!

4 servings

4 chicken breasts
2 egg yolks
2 tablespoon water
1/3 cup flour
4 tablespoon dried breadcrumbs
3 tablespoons Parmesan cheese
½ teaspoon salt
white pepper
paprika

Cheese sauce:
2 tablespoons butter or margarine
2 tablespoons flour
1½ to 1 ¾ cups milk
1 teaspoon Worcestershire sauce
1 tablespoon Parmesan cheese
good ¾ cup grated, strong cheese
salt, pepper

some green bell pepper for decoration


Heat the oven to 350F.

Mix egg yolks and water in a bowl. Mix flour, dried breadcrumbs, Parmesan cheese, salt, pepper and paprika in another bowl. Dip the chicken in the eggs and then coat them with the flour mixture. Melt the fat in a frying pan and brown the chicken on both sides. Transfer them to an oven-proof dish. Put the chicken in the oven until done, approx 20 minutes.

Cheese sauce:

Melt the fat in a saucepan and stir in the flour. Dilute with milk and let the sauce boil until it thickens, 3 to 5 minutes. Add Worcestershire sauce and cheese and flavour to taste with salt and pepper.

Pour the sauce over the chicken or serve it separately. Decorate with shredded green sweet pepper.
