Clear vegetable soup - Klar grönsakssoppa

CLEAR VEGETABLE SOUP
Klar grönsakssoppa

This flavourful soup is quick and easy to make and almost cooks itself – ideal when you’re in a hurry.

4 servings

2 small carrots
2 celery stems
1 onion
1 tablespoon butter or margarine

1 tomato
1/3 cup grains of corn (maize)
1/3 cup green peas, preferably fresh
4 cups chicken or vegetable bouillon
2 garlic cloves
1 teaspoon thyme
2 tablespoons chopped parsley
4 tablespoons plain yogurt
½ to 1 teaspoon salt
white pepper

Trim, rinse and thinly slice carrots and celery. Peel and chop the onion. Melt the fat and sautée the trimmed vegetables until tender for approx 10 minutes while stirring.

Rinse, pit and dice the tomato. Add tomato, corn and peas to the carrot-celery mix. Add the bouillon, crush and add the garlic cloves and flavour with thyme. Bring it all to a boil, lower the heat and simmer slowly until the vegetables are tender, approx 15 minutes. Remove the saucepan from heat and stir in the parsley.

Pour the soup in deep plates with a dab of yogurt in each plate and serve immediately.
