CREME-FILLED DREAM COOKIES

These delicious, light cookies with their fresh passionfruit filling are perfect with coffee or tea, and as you might have understood I love anything with passionfruit in it. The Swedish dream cookies are airy and light and crumble in your mouth and they’re very popular – just like a dream (if it's not a nightmare …)

25 double cookies

1 ¼ cups cornflour
1/3 cup flour
3½ oz unsalted butter (or margarine)
7 oz cream cheese
¾ cup powdered sugar

Passionfruit crème:
1 ¾ oz cream cheese
2/3 cup powdered sugar
pulp from 1 passionfruit


Heat the oven to 300F. Line a baking plate with baking paper.

Mix cornflour and wheat flour. Stir fat and cream cheese with an electric beater or a mixer until smooth. Add powdered sugar, little by little, and then blend in the flour mixture. Roll to 50 teaspoon-sized balls and put them on the baking plate. Press each with the back of a floured fork and bake in the oven until the cookies are only just turning golden, approx 15 minutes. Transfer the baking paper with the cookies to a rack and allow to cool completely.

Mix the filling well together in a bowl. Spread filling on one cake and attach another cake on top so that they are double. Continue doing this until you have 25 double cookies. Keep in the fridge.

You can add chopped, candied ginger to the dough as a delicious variety. If you wish, you can also add the passionfruit filling directly to the dough instead of making double cookies with filling – then make them a little larger instead.
