CURRY SAUSAGE STEW
Korvgryta med currydoft

Make the everyday sausage really interesting with the help of curry, pineapple and apple, a more festive everyday dish!

4 servings
14 oz to 1 lb Falu sausage or other suitable sausage 
(I don't think you can get this type of sausage everywhere
outside Sweden!)
1 small red bell pepper
4 slices canned pineapple
1 red apple
1 tablespoon butter or margarine
2 to 2½ teaspoons curry
¾ cup whipping cream
2/3 cup water
½ to ¾ chicken bouillon cube
2 tablespoons mild chili sauce
2 teaspoons Maizena or cornflour
turmeric
salt, white pepper
pinch sugar (optional)

For serving:
boiled potatoes or rice, broccoli,
salad and bread

Slice the sausage, shred the sweet pepper in 2 inch shreds and cut the pineapple in pieces. Split and core the apple and cut in thin wedges. Melt the fat in a saucepan and sizzle the curry for a minute. Add cream, water, bouillon cube, chili sauce, Maizena and turmeric and let boil for a minute or so.

Add sausage and sweet pepper and simmer slowly for 5 minutes. Add apple and pineapple and boil for a few minutes more. Flavour with salt and pepper to taste plus an optional pinch of sugar. Serve and enjoy!
