EASY-MADE SALAD SAUCES
Lättlagade salladssåser

A good dressing can make any salad an explosion of taste. Here are three well-known dressings for different purposes.

4 servings of each

THOUSAND ISLAND DRESSING

1 red bell pepper
1 small onion
2 pickled gherkins
3 tablespoons mild chili sauce
4 tablespoons mayonnaise
salt, pepper
1 teaspoon paprika
1 teaspoon fresh lemon juice

Trim the bell pepper and put in a mixer or food processor. Peel and finely chop the onion and the pickled gherkins. Mix onion, gherkins and sweet pepper with chili sauce and mayonnaise and blend well. Flavour with salt and pepper, paprika and lemon juice. Good with shrimp and other shellfish.

ROQUEFORT DRESSING

3½ oz Roquefort cheese
¾ cup soured cream
1 tablespoon white wine vinegar
salt, pepper, grated nutmeg


Finely crumble the cheese and mix with soured cream and vinegar. Blend well and flavour with salt, pepper and nutmeg. Good with raw vegetable salads.

HERB VINAIGRETTE

4 tabespoons vinegar + 6 tablespoons oil
1 teaspoon Dijon mustard
salt, pepper
2 tablespoons chopped fresh herbs
1 garlic clove


Mix vinegar, mustard and salt and then beat in the oil, little by little, until the sauce is creamy. Flavour to taste with pepper. Blend in the herbs and crush the garlic in it all. Excellent with most leafy salads.
