CHICKEN PEANUT STEW
Kycklinggryta med jordnötter
1 onion
1 teaspoon olive oil
2 tablespoons butter or margarine
2 tablespoons flour
½ teaspoon cumin
½ teaspoon cinnamon
2 ¾ cups ready-made chicken bouillon
(i.e. not concentrated)
¾ cup cream, 15% fat
¼ cup peanut sauce
½ teaspoon salt
2 tablespoons chopped peanuts (optional)
Trim and shred the bell pepper, peel and chop the
onion. Heat the oil on medium heat in a large pot and Brown bell pepper and
onion until tender, about 5 minutes. Put the vegetables on a plate.

A lovely stew with chicken, peanuts, bell peppers
and onions – very easy to make.

8 oz boiled or grilled, shredded chicken
1 green bell pepper1 onion
1 teaspoon olive oil
2 tablespoons butter or margarine
2 tablespoons flour
½ teaspoon cumin
½ teaspoon cinnamon
2 ¾ cups ready-made chicken bouillon
(i.e. not concentrated)
¾ cup cream, 15% fat
¼ cup peanut sauce
½ teaspoon salt
2 tablespoons chopped peanuts (optional)
Melt the fat in the pot and beat in flour, cumin and
cinnamon. Simmer while stirring for 1 minute. Add bouillon, cream and peanut
sauce, bring to a boil and keep boiling for about 5 minutes until the sauce
thickens.
Add chicken, sweet pepper, onion and salt. Bring to
a boil again, stirring occasionally until the casserole is heated through,
about 10 minutes.
Sprinkle with optional peanuts and serve immediately.
