UNBELIEVABLY GOOD MOUSSE CAKE

3 tablespoons melted butter or margarine
3 tablespoons honey
1/3 cup peach juice or orange juice
4 gelatin sheets = 2 teaspoons powdered gelatin
3 large, skinned peaches, preferably fresh
¼ cup brown sugar
1 tablespoon fresh lemon juice
1 tablespoon vanilla sugar
¾ cup vanilla yogurt
¾ cup cottage cheese
Mix the biscuit crumbles with chopped pecans, butter or margarine and honey. Press it out in the bottom of a round springform pan, diameter approx 9 inches.

This is a lovely, elegant dessert – a perfect finish
for a festive dinner.

1 ¼ cups crumbled digestive biscuits
¼ cup chopped pecans3 tablespoons melted butter or margarine
3 tablespoons honey
1/3 cup peach juice or orange juice

¼ cup brown sugar
1 tablespoon fresh lemon juice
1 tablespoon vanilla sugar
¾ cup vanilla yogurt
¾ cup cottage cheese
Mix the biscuit crumbles with chopped pecans, butter or margarine and honey. Press it out in the bottom of a round springform pan, diameter approx 9 inches.
Bring peach or orange juice in a saucepan and add
the gelatin. Allow to cool. Slice the peaches and let them simmer with brown
sugar and lemon juice for 5 minutes or until the peaches are tender. Stir in
the vanilla sugar. Put half of the peaches in a bowl and set aside.
Finely mash remaining peaches in a food processor or
mixer. Add yogurt, cottage cheese and the gelatin mixture and work it all in
the food processor until smooth and creamy. Put the reserved peaches in the
un-baked pie shell, pour over the yogurt mixture and chill for 3 hours.
