SMOKED HAM AND MUSHROOM PASTA
Skink- och champinjonpasta
1 garlic clove
1 tablespoon butter or margarine
8 oz fresh mushrooms
1 small squash/zucchini
2 carrots
5 oz smoked ham
¾ cup plain yogurt, 3% fat
salt, coarsely ground black pepper
2 teaspoons fresh tarragon
Peel and chop onion and garlic. Melt the fat in a
frying pan and sautée onion and garlic on medium heat until tender. Slice the
mushrooms and brown them with the onion for about 5 minutes.

This delicious pasta dish gets a nice and juicy
flavour from mushrooms combined with smoked ham and veggies.
4 servings
14 oz pasta of your choice
1 onion1 garlic clove
1 tablespoon butter or margarine
8 oz fresh mushrooms
1 small squash/zucchini
2 carrots
5 oz smoked ham
¾ cup plain yogurt, 3% fat
salt, coarsely ground black pepper
2 teaspoons fresh tarragon
Boil the pasta.
Split the squash and scoop out the pips with a spoon
and cut in very fine shreds. Do the same with carrots and ham, put the veggies
in the pan and let them simmer in their own juices until crisp and heated
through, approx 7 minutes. Add the ham.
Pour off any juices from the pan and blend in the
yogurt. Put the pasta on plates and pour the sauce on top. Flavour with salt
and coarsely ground black pepper to taste and decorate with fresh tarragon.
Serve immediately.
You can make this a vegetarian dish by substituting
the ham with chick peas or sunflower seeds.
