ENGLISH BLUEBERRY DESSERT
Engelsk blåbärsdessert
6 teaspoons powdered gelatin
4 oz blueberries
grated zest from 1 lemon
1 to 2 teaspoons honey
Mix water and apple juice and stir in the powdered
gelatin. Pour the mix in a saucepan and heat while beating until the liquid is 37°C/body heat. Pour in a bowl and put in the fridge for 1 to 2 hours,
until it starts to thicken. When this happens, you blend in the blueberries.
Spoon the jelly into serving cups or glasses and chill until set. It takes 30
minutes to 1 hour before completely set.
Engelsk blåbärsdessert
Sweet blueberries in jelly, topped with a flavourful
yogurt sauce. Do you have this dish in the UK, or is it just a name? It’s been called
that ever since I was little. It’s a perfect finish after a hearty dinner.

1 ¾ cups water
1 ¾ cups concentrated apple juice6 teaspoons powdered gelatin
4 oz blueberries
Topping:
1/3 cup low-fat, mild plain yogurtgrated zest from 1 lemon
1 to 2 teaspoons honey
mint leaves for decoration
Blend the yogurt with lemon zest and honey. Put a
dollop of the topping on the jelly just before serving. Decorate with mint
leaves and maybe some extra blueberries.
You can place the jelly in the freezer the first
time for thickening, but stir occasionally so that it doesn’t set altogether
from the beginning. You can change the taste by adding more or less water, or
use some other clear, concentrated drink like elderberry.
Blend in the berries when the jelly starts to set.
If they sink to the bottom, the jelly hasn’t set enough – chill once more in
that case.
