FANTASTIC ALMOND SQUARES
Fantastiska mandelkakor

Fluffy squares filled with vanilla creme and covered with crunchy almonds. Perfect to serve when you are many people around the coffee table!

16 squares

4 cups flour
1 ¾ oz fresh yeast
1/3 cup sugar
1 cup warm milk, 37°C/body heat
1 tablespoon vanilla sugar
2 eggs
2½ oz butter or margarine
some fat or baking paper for the baking plate

Almond cover:
5 oz butter or margarine
1 cup sugar
7 oz flaked almonds
1/3 cup cream, 15% fat

Filling:
ready-made custard or vanilla crème
¾ cup heavy Cream


Put the flour in a bowl and make a hollow in the middle. Crumble the yeast, sprinkle with 1 teaspoon sugar and stir in 5 tablespoons lukewarm milk and mix with some flour. Cover with some of the flour and let rise for 15 minutes. Heat the oven to 390F.

Melt the fat for the almond cover and blend in sugar and flaked almonds. Let this mixture melt while stirring continuously. Add the cream and allow to cool.

Blend in remaining sugar, vanilla sugar, remaining milk, eggs and fat in the dough. Blend until it no longer sticks to the bowl. Cover and leave to rise for another 45 minutes.

If you don’t use ready-made custard or vanilla crème, blend it together like it says on the package. Allow to cool.

Prepare the baking plate. Knead the dough lightly and roll it out. Place it on the baking plate and let rise for another 5 minutes or so. Spread the almond cover on top of the dough and bake in the oven for 30 to 40 minutes. Take it out and let cool. Split it horizontally. Beat the cream until stiff and mix it with the custard or vanilla crème. Spread this on one of the cake pieces and put the other one on top. Cut the cake in 16 pieces.
