Peaches and blueberries is a fantastic combo. The crunchy dough cover and some ice cream makes this dessert even more irresistible.
2 tablespoons potato starch
1 ¼ teaspoons ground cinnamon
¼ cup brown sugar
2 tablespoons fresh lemon juice
3 tablespoons sugar
½ teaspoons baking powder
1 tablespoon butter or margarine
¼ cup plain yogurt
2 tablespoons cold water
Heat the oven to 390F.

Peaches and blueberries is a fantastic combo. The crunchy dough cover and some ice cream makes this dessert even more irresistible.

4 fresh peaches or 8 canned halves
2 cups fresh or frozen blueberries2 tablespoons potato starch
1 ¼ teaspoons ground cinnamon
¼ cup brown sugar
2 tablespoons fresh lemon juice
Cover:
¾ cup flour3 tablespoons sugar
½ teaspoons baking powder
1 tablespoon butter or margarine
¼ cup plain yogurt
2 tablespoons cold water
Heat the oven to 390F.
Bring some water to a boil and scald the fresh
peaches. Peel, pit and slice them (or slice the canned halves). Rinse and trim
the blueberries. Alternate layers of peaches and blueberries in oven-proof
serving dishes or in a large oven-proof dish. Dust with potato starch and
cinnamon, sprinkle with brown sugar and splash with lemon juice.
Mix flour, sugar and baking powder in a food
processor. Add fat and yogurt and blend to a dough. Add some cold water if
necessary. Roll out the dough and take out 6 round pieces with a glass. Put one
piece on top of the fruit in each serving dish or put the rolled, whole dough
on top of the fruit in the big dish.
Bake in the middle of the oven for 20 to 30 minutes
until the cover is golden brown. Serve with vanilla ice cream.
