VINTAGE-STYLE STRAWBERRY PIE

Let this creamy pie with lovely strawberries become a dignified finish when you have dinner guests next time!

8 pieces

Dough:
¾ cup flour
¼ cup graham flour (wholemeal flour)
2½ oz butter or margarine
¼ cup plain cottage cheese
salt
½ teaspoon sugar
baking powder
1 tablespoon cold water

Filling:
4 cups strawberries, fresh or frozen
¼ cup sugar
3 tablespoons maizena or cornflour
1/3 cup water
2 tablespoons fresh lemon juice


Blend together all ingredients for the dough, preferably in a food processor. Roll out the dough between plastic foil, then press it out in an un-greased pie pan. Put it in the fridge for 10 minutes. Heat the oven to 390F. Prick the dough with a fork and bake in the middle of the oven for 20 to 30 minutes until nicely coloured. Allow to cool.

Split half of the strawberries and set aside. Chop remaining strawberries.

Mix sugar and maizena in a saucepan. Add some water, little by little, then the chopped strawberries and the lemon juice. Bring it all to a boil while stirring and allow to cool in the fridge.

Spread out the filling in the pie shell and decorate with the split strawberries. Serve the pie with vanilla “whip” or a vanilla sauce that you have mixed with low-fat crème fraîche, or whatever vanilla … it’s so delicious!
