FRUIT IN CARAMEL SAUCE
Frukt med karamellsås
10 oz cherries
2 tablespoons flaked almonds
1 2/3 cups milk
4 tablespoons sugar
2 tablespoons butter or margarine
Start with the caramel sauce. Stir the potato starch
with 4 tablespoons milk. Put the sugar in a saucepan and melt on medium heat
until light brown and runny. Gently stir remaining milk into the saucepan and
bring to a boil. Add the potato starch mixture and bring to a boil while
stirring. Add the fat and melt it. Allow to cool slightly and stir again so
that no skin will form on the surface.

The slightly sweet caramel sauce goes incredibly well
with the sharp-tasting fruits. This is a typical summer dessert and a
delightful refreshment!

Fruit salad:
2 peaches10 oz cherries
2 tablespoons flaked almonds
Caramel sauce:
2 tablespoons potato starch or equal1 2/3 cups milk
4 tablespoons sugar
2 tablespoons butter or margarine
Rinse the fruit. Trim the peaches and slice them. Also
trim the cherries and pit them. Heat up a frying pan (with no fat) and roast
the almonds. Put the fruit in a bowl, pour on the caramel sauce and sprinkle
with the almonds.
