HERB-FLAVOURED POTATO WEDGES

3 tablespoons oil
½ to 1 teaspoon salt
½ teaspoon dried oregano
½ teaspoon dried thyme
black pepper
paprika
¼ to ¾ cup grated Parmesan cheese
Brush and clean the potatoes well, then cut it in wedges. Boil in lightly salted water for a few minutes, pour off the water and steam off until dry. Put the wedges in a greased, oven-proof dish, brush with oil and sprinkle with salt and herbs. Fry in the middle of the oven at 440F for 15 minutes. Turn over once.

Frying potato wedges in the oven is a fun way to
cook potatoes. Simple, cheap and really, really good.
4 servings
8 to 10 middle-sized potatoes, unpeeled
water, salt3 tablespoons oil

Sprinkle with cheese and fry for another 10 minutes
or until the potatoes are coloured and the cheese has melted. Stir
occasionally. Serve straight from the oven with e.g. fried or barbecued meat,
chicken, sausage or hamburgers.
