HOLLANDAISE CHICKEN
Hollandaisekyckling
1 teaspoon baking powder
½ teaspoon salt
½ teaspoon white pepper
1 beaten egg
2 to 3 tablespoons butter or margarine
6 egg yolks
1½ tablespoons fresh lemon juice
tabasco
cayenne
parsley
Mix flour, baking powder, salt and pepper on a
plate. Beat the egg. Dip the chicken fillets in the beaten egg and then in the
flour. Melt the fat in a frying pan and brown the fillets on both sides until
coloured. Lower the heat and let them fry for 10 to 12 minutes.
Hollandaisekyckling
Serve the delicious, sunny yellow hollandaise with
the chicken fillets. It tastes like a dream and is a real festive dish. Serve
with boiled rice and asparagus.

4 chicken fillets
1/3 cup flour1 teaspoon baking powder

Hollandaise sauce:
7½ oz butter or margarine6 egg yolks
1½ tablespoons fresh lemon juice
tabasco
cayenne
Decoration:
sliced lemonparsley
Sauce:
Melt the fat in a saucepan and keep really warm. Mix
egg yolks and lemon juice in a mixer and then add the hot fat in a thin stream
while the mixer/food processor is working (or use an electric beater). Flavour
to taste with tabasco and cayenne.
Put the chicken on a serving plate and decorate with
lemon slices and parsley. Serve the sauce separately.
