Leek and bacon - Purjo med bacon (retro)

You’ll have to excuse me if I don’t convert everything today, I’m in Stockholm and forgot to bring the conversion chart … how careless of me! I haven’t memorized all the measurements …

4 servings

Approx 2 lbs leek
water, salt
butter or margarine
7 oz bacon
3½ oz grated cheese


Thoroughly rinse the leek and cut it in 2 to 4 inches long pieces. Boil until almost tender in lightly salted water and drain. Grease an oven-proof dish and sprinkle with a thin layer of grated cheese. Put half of the leek in the dish and sprinkle with another layer of cheese.

Shred the bacon and sautée it without any fat in the pan and not too hot. Sprinkle half of the bacon on top of the leek, then remaining leek, bacon and cheese. Bake in the oven at 440F until the cheese has become golden. Serve straight from the oven with bread.

You can also cook cauliflower, broccoli, sprouts or fennel this way.
