Chicken in cider sauce - Kyckling i cidersås

CHICKEN IN CIDER SAUCE
Kyckling i cidersås

4 servings

4 chicken fillets, in all approx 1 lb
2 tablespoons butter or margarine

Cider sauce:
1 shallot
1 garlic clove
½ apple
2 tablespoons butter or margarine
1½ cups apple cider
¾ cup pan juice + water
1 chicken bouillon cube
¾ cup cream
2 tablespoons flour

Apple salad:
4 apples
1 red onion
3 tablespoons chopped parsley
1/3 cup oil
3 tablespoons apple cider vinegar


Trim the chicken and brown in fat in a frying pan. Flavour with salt and pepper. Put them in the sauce (when the sauce is ready) so that they can simmer until done.

Peel and finely chop onion and garlic. Peel, core and finely chop the apple. Fry it all in fat in a sauté pan. Pour in the cider and boil together for 5 minutes. Measure the pan juices and fill up with water so you get good ¾ cup. Beat this into the pan plus bouillon, cream and flour. Let simmer for a couple of minutes. Beat occasionally and flavour to taste with salt and pepper. Put the browned chicken in the sauce and let simmer until done.

Apple salad:
Core the apples and peel the onions. Dice it all evenly. Mix with parsley, oil and vinegar and flavour to taste with salt and pepper.
