Summer cake - Sommartårta (retro)

SUMMER CAKE
Sommartårta

1 cake

3½ oz butter or margarine
1 ¼ cups sugar
1 egg
2/3 cup creamy milk
1 ¼ cups flour
1 teaspoon baking powder
3 to 4 young rhubarb stems


Stir fat and sugar until fluffy. Add the egg, beaten with the creamy milk. Mix flour and sugar and stir into the batter. Pour in a well-greased, floured baking pan.

Cut un-peeled rhubarbs in approx 1 ½ inches long pieces and press them down into the batter. Heat the oven to 350F and bake for about 50 minutes. Serve this cake with coffee or as a dessert with vanilla sauce or ice cream.

You can substitute rhubarbs with peeled apple wedges, dipped in some sugar and cinnamon. Also sprinkle with some sugar and cinnamon on the cake before serving.
