Fest på skinkrest

Sometimes there’s just no good way of translating the name of a recipe so that it sounds good and appetizing in another language, but this is what it is – a leftover ham dish, and it’s good. :-D

4 servings

Leftovers from e.g. a Christmas ham
5 hard-boiled eggs
finely chopped parsley

Stew:
1 tablespoon butter or margarine
2 tablespoons flour
1 ¾ cups milk or creamy milk
salt, white pepper


Finely dice the ham. Separate egg yolks and whites – finely chop the yolks and coarsely cut the whites. Heat up the fat in a frying pan, add flour and dilute with milk or creamy milk, little by little, to a smooth sauce. Flavour to taste and simmer for a few minutes. Add the chopped egg whites.

Pour the stew onto a deep serving plate and sprinkle with the chopped egg yolks in a nice pattern, like squares that you then can fill with the diced ham. Sprinkle the chopped parsley around the edge.
