Fillet of pork with cheese - Fläskfilé med oststavar (retro)

FILLET OF PORK WITH CHEESE
Fläskfilé med oststavar

4 servings

1 large or 2 small fillets of pork
salt, paprika
3½ oz mild cheese
1 tablespoon flour
1 ¾ to 2½ oz butter or margarine
1 small onion
2 tablespoons finely chopped parsley
1 small can concentrated tomato paste, about 2½ oz
2 dl (good ¾ cup) soured cream


Trim the meat really well and rub them with ½ teaspoon salt and 1 teaspoon paprika. Cut the cheese in small sticks, about 4 cm long. Stick them in all around the meat with the help of a small sharp knife. Leave about 1 cm of the cheese outside the meat. Sprinkle with a thin layer of flour and brown well in a deep frying pot. Add finely chopped parsley, chopped onion, tomato paste and soured cream, cover and simmer on low heat until the meat is tender and done. Flavour the juice to taste.

Serve with potatoes and vegetables of your choice.
