LEMON CHICKEN IN THE OVEN
Citronkyckling i ugn

The chicken is juicy when baked in the oven (I was recently told that it’s better to use the word “bake” when you make something in the oven even if it’s not bread, cookies or a cake, but in Sweden we say “ugnssteka” in this case, which means “fry in the oven”! :-D). It’s got a lovely taste of lemon, honey, garlic and herbs, whatever you choose to call the cooking method. 

4 servings

1 chicken in pieces, approx 2 lbs, or 2 lbs chicken parts
2 tablespoons oil
4 crushed garlic cloves
grated zest from 2 lemons
1 tablespoon honey
¼ teaspoon salt
¼ teaspoon white pepper
1 teaspoon dried oregano
½ teaspoon dried thyme
paprika


Grease an oven-proof dish or a small roasting pan with 1 tablespoon oil. Rub the chicken with garlic and put them in the pan, skinside down. Sprinkle with lemon zest. Mix remaining oil with lemon juice and honey and pour this over the chicken. Sprinkle with salt, pepper, oregano, thyme and paprika.

Bake the chicken at 390F for about 30 minutes. Turn the chicken over in the pan and bake for another 20 minutes or so. Baste occasionally. Put the chicken on a serving plate and spoon the pan juices over it.

Serve with rice or pasta and broccoli, or something else! Sweet peppers is lovely with this as well.
