LEMON DROPS
Citronklickar
1 egg
1 egg yolk
grated zest from 1 lemon
2 teaspoons fresh lemon juice
1 ¼ cups flour
¼ teaspoon baking powder
4 tablespoons raisins
Stir fat and sugar until fluffy. Add egg and egg yolk. Stir until well blended, then add lemon zest and juice. Mix flour, baking powder and raisins. Stir the flour mixture into the batter and leave the dough in the fridge for about 30 minutes.

These lovely cookies are quick and easy to make.
24 cookies
3½ oz butter or margarine
1/3 cup sugar1 egg
1 egg yolk

1 ¼ cups flour
¼ teaspoon baking powder
4 tablespoons raisins
Stir fat and sugar until fluffy. Add egg and egg yolk. Stir until well blended, then add lemon zest and juice. Mix flour, baking powder and raisins. Stir the flour mixture into the batter and leave the dough in the fridge for about 30 minutes.
Drop out tablespoon-sized dabs of the batter with 1
inch in between on a greased baking plate – or use baking paper. Bake in the
middle of the oven at 350 to 390F for 10 to 12 minutes. Let cool
slightly, then get cold on a rack. Keep in air-tight jars.
