Low-fat salad dressing - Mager salladsdressing

LOW-FAT SALAD DRESSING
Mager salladsdressing

This simple but flavourful dressing is a low-fat alternative to ready-made mayonnaise or salad dressing.

8 servings

2/3 cup plain yogurt
1 teaspoon Dijon mustard
1 to 2 teaspoons white wine vinegar
4 tablespoons light-coloured olive oil
brown sugar
salt
Italian salad spice
white pepper
1/3 cup low-fat yogurt (if there is low-fat Greek or 
Russian yogurt, use that)

Beat yogurt, mustard and vinegar in a bowl. Use a balloon beater (it’s called that in Swedish, I don’t know if you have another name!) and beat until smooth. Gradually add the oil while beating vigorously, preferably with an electric beater, until everything is well blended. Beat in sugar, salt, salad spice and some white pepper.

Stir the yogurt until smooth and blend it into the yogurt mix. Stir until everything is well blended.

You can also add 1 ¾ oz chopped dill and 1 tablespoon fresh lime juice in the dressing and serve it with boiled, cold or warm-smoked salmon. Add 1 ¾ oz finely chopped basil and 1 crushed garlic clove and serve it with shrimp. Serve chicken with the dressing if you first flavour it with ½ tablespoon curry paste and 1 tablespoon mango chutney. Drizzle this over some sliced, cold, boiled or salted chicken.
