Melon bowl with vanilla cream - Melonskål med vaniljgrädde

MELON BOWL WITH VANILLA CREAM
Melonskål med vaniljgrädde

A fresh finish to a lovely 3-dish menu perhaps?

4 servings

2 small melons, e.g. galia or cantaloupe
7 oz raspberries
1 bunch mint
2 tablespoons white treacle/molasses
zest and juice from ½ lime

Vanilla cream:
¾ cup heavy cream
1/3 cup Greek yogurt, 10% fat
2 teaspoons vanilla sugar


Split the melons, remove the pits and scoop out the pulp. Dice the pulp and mix it with raspberries. Finely chop the mint and mix it with treacle, lime zest and juice. Pour this marinade over the fruit and then divide it into the melon bowls.

Beat the cream, stir in the yogurt and flavour with vanilla. Serve with the vanilla cream.
