MELON BOWL WITH VANILLA CREAM
Melonskål med vaniljgrädde
1 bunch mint
2 tablespoons white treacle/molasses
zest and juice from ½ lime
1/3 cup Greek yogurt, 10% fat
2 teaspoons vanilla sugar
Split the melons, remove the pits and scoop out the pulp. Dice the pulp and mix it with raspberries. Finely chop the mint and mix it with treacle, lime zest and juice. Pour this marinade over the fruit and then divide it into the melon bowls.

2 small melons, e.g. galia or
cantaloupe
7 oz raspberries1 bunch mint

Vanilla cream:
¾ cup heavy cream1/3 cup Greek yogurt, 10% fat
2 teaspoons vanilla sugar
Split the melons, remove the pits and scoop out the pulp. Dice the pulp and mix it with raspberries. Finely chop the mint and mix it with treacle, lime zest and juice. Pour this marinade over the fruit and then divide it into the melon bowls.
Beat the cream, stir in the yogurt
and flavour with vanilla. Serve with the vanilla cream.
