Mustard-marinated flank steak - Senapsmarinerad flankstek

MUSTARD-MARINATED FLANK STEAK
Senapsmarinerad flankstek

This flank steak is marinated and you then save the marinade so it can flavour the vegetables.

4 servings

1 flank steak, approx 1 1/3 to 1 lb 7 oz
8 oz cherry tomatoes
2 to 3 carrots
4 tablespoons oil
7 oz sugar peas
2 crushed garlic cloves
salt, pepper

Marinade:
2/3 cup oil
3 tablespoons honey
1 tablespoon vinegar
1 tablespoon French mustard
2 garlic cloves
curry


Mix together the ingredients for the marinade. Put the steak in a deep dish and pour over the marinade. Marinate in the fridge for 2 to 6 hours. Turn the steak once.

Split the tomatoes. Peel and thinly slice the carrots. Take up the meat and put it in an oven-proof dish – save the marinade. Grill the meat in the upper part of the oven at 480 to 525F for 6 to 8 minutes per side.

Heat up the oil in a frying pan or a wok and sizzle the carrots for about 5 minutes. Blend in the sugar peas and sizzle for a few minutes more. Pour the remaining marinade over the vegetables and gently blend in the tomatoes. Put a lid on and simmer gently for a few minutes. Flavour to taste with garlic, salt and pepper.

Slice the meat and serve it together with the vegetables.
