Simply fresh salmon fillet

SIMPLY FRESH SALMON FILLET

The Swedish name for this recipe is impossible for me to translate except for the word ”laxfilé” (salmon fillet). And I can’t even eat it, so why bother, you might ask? Well, I’m thinking of the people who really love salmon – this is supposed to be really good! :-D A slice of fresh salmon fillet, fried in the oven, is a true delicacy according to most people.

4 servings

4 slices salmon fillet, diagonally cut,
each approx 5 oz
1 tablespoon fresh lemon juice
½ teaspoon salt
coarsely ground black pepper
1 tablespoon oil

Sauce:
¾ cup crème fraîche or soured cream
2/3 cup milk
½ fish bouillon cube
½ teaspoon Maizena
salt
cayenne

Decoration:
bleak roe
fresh dill

Mix crème fraîche, milk, bouillon cube and Maizena in a saucepan and boil for a couple of minutes. Flavour to taste with salt and cayenne.

Grease an oven-proof dish or roasting pan and place the salmon fillets in it. Squeeze the lemon juice over the fish and sprinkle with salt and pepper. Brush the salmon with oil and put in the oven at 200°C/390F for 2 to 6 minutes, until the fish is firm and done. The time depends on how thick the slices are.

Serve the fish on plates with a little of the sauce drizzled around them. Decorate with bleak roe and some dill sprigs. Serve remaining sauce separately.
