PENNE WITH CHILI AND BACON SAUCE
Penne med chili- och baconsås

A simple but delicious pasta dish with a hearty tomato sauce with bacon that will be loved by everyone.

4 servings

14 oz pasta, e.g. penne
3 tablespoons olive oil
2 slices shredded bacon
1 chopped white onion
3 chopped garlic cloves
1 large red chilli fruit, trimmed and
finely chopped, no seeds left
1 can crushed tomatoes, 14 oz
1 tablespoon tomato paste
3 tablespoons chopped leafy parsley
1/3 cup finely grated Parmesan cheese

Bring water to a boil in a large saucepan, put in the pasta and boil for 8 to 10 minutes until al dente. Drain well and put it back in the saucepan.

Heat up the oil in a frying pan and fry the bacon for 4 to 5 minutes until golden. Add the onion and sauté for 2 to 3 minutes until it starts to get tender. Add garlic and chilli and fry for 1 minute. Add crushed tomatoes, blend in the tomato paste and ¼ cup water. Bring to a boil, then simmer slowly for about 10 minutes until it starts to thicken.

Blend tomato sauce and parsley with the pasta. Heat up for about 2 minutes while stirring until everything is well blended and heated through. Serve with Parmesan cheese.

You can substitute the bacon with a spicy sausage, e.g. Italian salami, chorizo or some other sausage. You can also add black or green olives to your liking.
