Rice temptation - Risfrestelse

RICE TEMPTATION
Risfrestelse

Save leftover rice and make something filling and delicious. With the rice as base you go to your pantry, take what you have and just throw it together.

4 to 6 servings

1 onion
1 carrot
½ green bell pepper
1 tablespoon oil
1 cup leftover chicken, or pork or beef
2 cups boiled rice
2 eggs
¾ cup cream, 15% fat
3 tablespoons Chinese soy sauce


Peel onion and carrot. Trim the bell pepper and chop the onion. Finely diced carrot and sweet pepper. Heat the oil in a frying pan and sizzle onion, carrot and sweet pepper for about 5 minutes. Blend in the meat and heat for another couple of minutes.

Mix vegetables and meat with rice and put it all in a greased, oven-proof dish. Mix egg, cream and soy sauce in a bowl and pour this in the dish. Bake in the middle of the oven at 350F for about 20 minutes, until the egg mixture has set.

Serve and enjoy!

You can make this dish completely vegetarian by substituting the meat with different vegetables.
