Bell pepper pan - Paprikapanna

BELL PEPPER PAN
Paprikapanna

Vegetable pan with delicious bell peppers. Choose different colours, it looks really decorative. The bacon can be omitted if desired. Serve with rice and a salad.

4 servings

4 tomatoes
4 large bell peppers
2½ oz bacon
2 onions
2 tablespoons butter or margarine
2 tablespoons tomato paste
½ teaspoon salt
white pepper
½ to 1 teaspoon paprika
2 tablespoons chopped parsley

Dice the tomatoes, trim the bell peppers and cut them in shreds. Cut the bacon in pieces, peel and chop the onions. Melt the fat in a large frying pan or saucepan and sizzle bacon and onions for about 5 minutes. Blend in tomatoes, bell peppers, tomato paste, salt and pepper, cover and simmer slowly for about 15 minutes. Stir occasionally. Add paprika and flavour to taste with salt and pepper. Sprinkle with parsley and serve.

This dish is good for freezing and is great to serve with fried pork chops, sausage and ground meat dishes or kassler (warm-smoked cured loin of pork).
